Café de Olla

 
 
This cofee is traditionally made over a wood fire in a earthware Mexican cooking pot, called an 'Olla'

Ingredients:

4 cups of water
150gr brown sugar
1 teaspoon molasses
small cinnamon stick
1 cup dark roasted coffee, medium grind
aniseeds

Preparation:

Slowly boil the water, sugar, molasses, cinnamon and aniseeds in a pan. Stir well to dissolve the molasses and sugar. When the mixture gets to the boiling point, mix the hot coffee in it. Remove from the heat and steep it for about 5 minutes.
