Chocolate Mandarijn Trifle

Fruity, sweet and very easy to prapare.

Ingredients:
Bottom 4 trifle sponges 14 amaretti cookies 60 ml (4 tbsp) Amaretto di Sarone or sweet sherry 8 manderin oranges
Custard 200 gr chocolate, chopped in to small pieces 30 ml (2 tbsp) cornflour 30 ml (2 tbsp) superfine sugar 2 egg yolks 200 ml milk 250 gr mascarpone mandarin slices chocolate shapes
| Preparation: - Break up the sponges and amaretti, and put in a large glass serving dish. - Sprinkle with Amaretto or sherry. - Squeeze the juice from two mandarins and sprinkle into the dish. - Segment the rest and put in the dish. - To make the custard,nmelt the chocolate in a heatproof bowl. Mix the cornflour, sugar and egg yolks to a smooth paste. - Heat the milk in a small pan until almost boiling, then pour on to the egg yolk mixture, stirring constantly. - Return to the clean pan and over a low heat until the custard has thickend and is smooth. - Stir in the mascarpone until melted, then mix in the melted chocolate. Spread over the sponge and biscuit mixture. - Cool, then chill well. - To serve spread the mascarpone over the custard, then decorate with mandarin slices and chocolate shapes.
| | | Notes: Canned mandarin oranges can be used. Spoon some juice over the amaretti and sponges.
