Straciatella Cake

 
 
A simple cake with chocolate pieces inside.

Ingredients:

115 gr superfine suger
115 gr flour
5 ml (1 tsp) baking powder
60 ml (4 tbsp) cornflour
115 gr softened butter
2 beaten eggs
5 ml vanilla essence
30 ml (2 tbsp) currants or raisins
25 gr chopped walnuts
Grated rind of a half lemon
45 ml  (3 tbsp) chocolate chips
Icıng sugar


Preparation:

- Preheat the oven to 180°C.
- Grease and line a 22x12cm loaf pan. Sprinkle 25ml(1.5 tbsp) sugar into the pan and tilt to distribute.Shake out any excess sugar.
- Sift the flour, baking powder and cornflour togerher three times.
- With an electric mixer cream the butter until soft.
- Add the remaining sugar and continue beating until light
and fluffy.
- Add the eggs, one at a time, beting.
- Gently fold the dry ingredients into the butter mixture, in three batches, being careful not to overmix.
- Fold in the vanilla essence, currants or raisins, walnuts, lemon rind and chocolate chips until just blended.
- Pour the mixture into the prepared pan and bake for 45-50 minutes.
- Cool in the pan for 5 minutes before transfearring to another plate to a  to cool completely.



Notes:

If you like, dust with icing sugar and/or walnuts before serving.
