Ingredients:
115 gr chocolate , chopped into small pieces
45 ml milk
150 gr light brown sugar
3 eggs
200 gr self rising flour
15 ml cocoa poeder
1 quantity Chocolate Buttercream
| Preparation: - Preheat the oven to 180°C.
- Grease two 17 cm round sandwich cake pans and line the basis with baking parchment.
- Select a small pan and a heatproof bowl that will fit over it. Place the chocolate and the milk in the bowl.
- In the pan bring some water just below simmering point. - Place the bowl containing the chocolate mixture on top. Leave about 5 minutes, until the chocolate softens, then stir until smooth.
- Leave the bowl set over the pan, but remove from the heat.
- Cream the butter or margarine with the sugar in a mixing bowl until pale and fluffy.
- Add eggs one at a time, beating well after each addition.
- Stir in the chocolate mixture until well combined.
- Sift the flour and cocoa over the mixture and fold in with a metal spoon until evenly mixed.
- Scrape into the prepared pans, smoot level and bake for 35-40 minutes or until well risen and firm.
- Turn out and transfer it on to another plate to cool.
- Sandwich the cake layers together with a thick layer of chocolate buttercream.
- Dust with icing (confetioners' or powder) sugar and cocoa just before serving (if liked).
