Cinnamon Coffee Cake

This coffee cake has the perfect hints of cinnamon and spices.

Ingredients:
4 cups whole wheat pastry flour
1 tablespoon baking powder
1 teaspoon baking soda
1 1/2 teaspoons salt
1 1/2 teaspoons cinnamon
1/4 teaspoon allspice
1/4 cup canola oil
1/2 cup vanilla soy yogurt
1 cup pure maple syrup
1 1/2 cups plain soymilk
1 teaspoon vanilla
For the topping
1/4 cup whole wheat pastry flour
3 tablespoons brown sugar
1/4 teaspoon cinamon
1 tablespoon canola oil
1 cup chopped walnuts
| Preparation: Preheat oven to 180C (350 F). Spray a 9x13 baking pan with non stick cooking spray.
For the topping
Sift together flour, sugar and cinnamon. Drizzle the oil in a little at a time and mix with your finger tips until crumbs form. Add the walnuts and mix.
For the cake
Sift together the dry ingredients in a large bowl. In a seperate bowl, vigorously wisk together the wet ingredients until well combined. Add the wet to the dry and combine.
Pour the batter into the prepared pan and sprinkle the topping over it. Bake at 180C for 45 minutes or until a toothpick or butter knife comes out clean.
